I love Mexican cuisine! I love the rich flavours, the fragrant spices and combination of unique tasty ingredient. I’d venture to say I eat a Mexican inspired dish every week. As a matter of fact, I always keep a pack of tortillas in my freezer and jar of chipotle paste in my fridge. I’m determined to visit Mexico in the next few years and taste to real authentic Mexican cooking. Avocados have gained major popularity over the last few years and it’s easy to figure out why. They are rich in nutrients such as vitamin K, potassium + folate, high in fiber and loaded with heart healthy dietary fat. Furthermore they have a unique soft texture when ripe and a muted creamy taste. They are really an interesting ingredient for creating distinctive recipes.

Avocado paired up with some delicious toasted bread, freshly scrambled egg and zingy fresh salsa is a match made in heaven. Salsa Fresca Avocado Toast

This tasty, fresh and flavourful spin on avocado toast can be whipped up in less than 15 minutes. It's packed with heart healthy fats from the avocado and eggs and topped with delicious serving of fresh salsa.

Ingredients

Avocado Toast

  • 1 medium avocado
  • squeeze of lime
  • 2 eggs
  • 1-2 tbsp milk optional
  • 2 slices bread I like seeded bloomer or sourdough
  • salt and pepper to taste
  • olive oil or few sprays of oil spray

Salsa Fresca

  • 1 medium tomato
  • ¼ red onion
  • ¼ bell pepper preferably red or yellow
  • 1 tsp chopped chilli optional
  • squeeze of lime
  • 1 tbsp coriander

Instructions

Salsa Fresca

  1. Dice the tomato, bell pepper, red onion, chilli and combine in a bowl with chopped coriander.
  2. Add a squeeze of lime and season with salt + pepper.

Avocado Mash

  1. Peel skin off the avocado or scoop avocado flesh from the skin. In a bowl mash the flesh using a fork until the avocado becomes a creamy smooth consistency.
  2. Add a squeeze of lime and season with salt + pepper.

Scrambled Egg

  1. Heat a non-stick pan on medium to high heat.
  2. Crack egg in a small bowl and beat until completely mixed. You can opt to add a tablespoon of milk to the egg this will give you more of a creamy scambled egg.
  3. Spray the pan with oil
  4. Pour in the egg mixture and let it for 20 seconds. Stir with a wooden spoon or spatula, lifting and folding it over from the bottom of the pan.
  5. Then stir and let it sit for another 10 seconds. Repeat until the egg or softly set then remove the pan from heat.

Toast

  1. Toast the bread so that it crunchy and golden brown.
  2. Layer the avocado mash on the toast. I find the easiest way is to spread it like butter with a knife. Top with the cooked scrambled egg and salsa fresca.
